Founded by a passionate chef dedicated to the timeless craft of Italian pasta-making, Pasta Lab was born out of a simple desire: to share the unmatched joy of fresh, handmade pasta with the people of San Antonio. After years of working in professional kitchens, our founder realized that the true magic of food isn’t found behind closed kitchen doors. It happens out in the open, where community, conversation, and craft connect.
Instead of opening a traditional brick-and-mortar restaurant, we chose a different path. We decided to meet you exactly where you are—at your neighborhood San Antonio farmers markets.
From Italy to South Texas, Our Uncompromising Process
We approach our craft like a delicious science experiment, constantly refining our methods to create the perfect noodle. We don’t take shortcuts. Every batch of pasta we roll out begins with premium whole wheat semolina flour imported directly from Italy. This nutrient-dense flour retains the natural grain, giving our pasta a rich, robust flavor and an incredible golden hue.
Using specialized artisan equipment, we mix our dough carefully to build a strong, silky texture. We then press our dough through traditional bronze dies. Unlike the smooth, mass-produced noodles you find in cardboard grocery boxes, our bronze-extruded pasta features a microscopically rough, matte surface. This textured, porous finish acts like a magnet for your favorite sauces, locking in flavor with every single bite.
Once cut, our pasta is immediately stabilized and packaged fresh, preserving its tender, melt-in-your-mouth quality without a single artificial preservative.
